Finely grounded almond powder, can be used as substitution of breadcrumbs or flour for a gluten free diet.
Suitable for Vegetarian.
Recipe for Almond Chicken
Ingredients: 250g chicken breast cut into strips, 75g ground almond, 2 eggs. 2½ tsp Tandoori powder, ½ tsp salt. ½ tsp pepper powder, ½ tsp chilli powder, 1 red onion cut into chunks. 1 roughly diced green pepper, 1 courgette cut into thin strips, 1 handful of cherry tomatoes, 2 tbsp olive oil, grated mild cheese of choice.
Method: Pre-heat the oven to 190°C and prepare a baking tray and a roasting tray will foil. In a bowl whisk the eggs. On a plate mix the ground almond, tandoori, chilli, salt and pepper and spread over the plate. Dip each Chicken strip in the egg then roll it in the ground almond mix before placing on the baking tray. In a bowl toss together the onion. green pepper, courgette and olive oil. Place in the roasting tray then place in the oven for 10 minutes. Sprinkle over some cheese for additional flavour.
